Dee Underhill, a woman whose life radiated love, service, and vibrant spirit, passed away peacefully in Laguna Beach, California, just days before her 88th birthday.
Born in Wichita, Kansas, Dee was the proud daughter of a former Kansas governor and carried that pioneering spirit and Midwest hospitality with her throughout her life. A graduate of the University of Kansas with a degree in early childhood education, she never missed a chance to give a great “Rock Chalk Jayhawk KU” for her beloved Alma Mater.
Dee found her greatest joy in family and in opening her home to everyone—whether for a pancake breakfast, holiday gathering, or drinks on the deck at sunset. She shared 62 devoted years with her husband, Gary, her true partner in life and love. Together, they raised three children—Charlene Underhill Miller (John) of Dana Point, Stephanie Bollenbacher (Mike) of Pasadena, and Ed Underhill (Karina) of Laguna Beach—and together they built a home filled with warmth and laughter.
Affectionately known as “Grandma Beach,” Dee was a beacon of joy to her grandchildren: Matthew Miller, Katelyn Bollenbacher Quintero (Matt), Garrison Bollenbacher (Bethany), Madison Underhill, Austin Underhill, and Morgan Underhill. Her legacy lives on in her great-grandchildren: Olivia Quintero, Myles Quintero, Scottie Bollenbacher, and a baby boy soon to arrive—already enveloped in love.
Dee was the quintessential volunteer, sharing her time and energy with causes close to her heart. She served with AFS, PEO, and was a 25-year volunteer with Laguna Beach’s Pageant of the Masters. She also lovingly rocked babies with special needs, offering comfort in the gentlest of ways.
Known for her legendary peanut brittle, Grandma’s pancakes, and sous-chef talents alongside Gary, Dee turned every meal into a cherished memory. Her garden bloomed with the same tenderness she extended to friends, family far and wide, and her beloved dogs.
Dee and Gary traveled the globe together, visiting all seven continents and finding wonder in every corner. In 1980, they co-founded Underhill International, an irrigation business built from their shared vision, now proudly led by their son Ed.
As a devoted friend, generous hostess, and joyful soul, Dee will be remembered for the grace she carried through life and the deep love she gave to those around her. Her spirit lives on in every open door, warm embrace, and treasured family tradition.
